Ingredients
Scale
Cluster Ingredients
- 2 cups white chocolate chips (or chopped white chocolate baking bars)
- 1 ½ cups roasted unsalted peanuts
- ½ teaspoon sea salt or ¼ cup crushed pretzels (optional for topping)
- Holiday sprinkles for topping (optional: caramel drizzle, or crushed peppermint)
Instructions
- Melt the White Chocolate: Use either the double boiler or microwave method to gently melt the white chocolate chips. For the double boiler, place a heatproof bowl over simmering water, making sure the bowl doesn’t touch the water, then stir continuously until smooth. For the microwave, heat in 15-20 second intervals, stirring after each until melted, careful to avoid burning.
- Mix in the Peanuts: Once the white chocolate is fully melted and smooth, add the roasted unsalted peanuts. Stir gently but thoroughly until all the peanuts are evenly coated with the white chocolate.
- Form the Clusters: Line a baking sheet with parchment paper. Using a spoon or small cookie scoop, drop spoonfuls of the chocolate and peanut mixture onto the parchment paper, spacing them slightly apart to prevent sticking.
- Add Toppings: Optional but recommended – sprinkle sea salt, crushed pretzels, or festive holiday sprinkles over each cluster to add extra flavor and texture.
- Set the Clusters: Place the prepared baking sheet in the refrigerator for about 30 minutes, or until the clusters have hardened and fully set.
- Serve and Store: Once hardened, the clusters are ready to enjoy. Store any leftovers in an airtight container either at room temperature or refrigerated to maintain freshness.
Notes
- Be cautious when melting white chocolate as it burns easily; melt slowly using low heat or short microwave intervals.
- Roasted unsalted peanuts give a nice balance of savory flavor; salted peanuts can be used but adjust additional salt accordingly.
- Toppings like sea salt or crushed pretzels add a delightful crunch and flavor contrast.
- These clusters are best consumed within a week when stored properly.
- For a festive touch, use crushed peppermint or holiday sprinkles as toppings.
