- 15-ounce can butter beans (include liquid, do not strain)
- 2 Tablespoons vegan cream cheese

- Prep the aromatics and basil. Finely dice the shallot, mince the garlic, and chop the fresh basil. A garlic press can be helpful for mincing garlic evenly.
- Heat the olive oil and cook tomatoes. Add 2 tablespoons olive oil to a pan and warm over medium heat. Add the cherry or grape tomatoes, salt, and pepper. Cook for 5-8 minutes, stirring occasionally, until the tomatoes burst and release their juices. Use a spatula to gently press tomatoes to help release more juice if needed.
- Sauté shallots and garlic. Add the diced shallots and minced garlic to the pan. Stir together and continue cooking for about 3 minutes until fragrant and softened.
- Add butter beans with liquid. Pour in the entire 15-ounce can of butter beans including the liquid. Stir to combine and bring the mixture to a simmer. Cook for about 5 minutes to reduce some liquid and allow flavors to meld.
- Incorporate vegan cream cheese. Stir in 2 tablespoons of vegan cream cheese until fully mixed and creamy.
- Finish with fresh basil. Turn off the heat and stir in the chopped fresh basil. Adjust seasoning with additional salt and pepper to taste.
