  • 4 salmon filets, cubed

  • 2 cups pineapple chunks (fresh or canned)
  • 1 tablespoon soy sauce

Broccoli

  • 1 large head broccoli (10-12 ounces, about 4 cups florets)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons garlic powder

Teriyaki Sauce

  • 3 tablespoons low sodium soy sauce
  • 1 teaspoon sesame seed oil
  • 1/2 teaspoon rice vinegar
  • 2 garlic cloves, microplaned
  • 1/2 inch ginger, microplaned
  • 2 tablespoons brown sugar

Garnish

  • Sesame seeds (optional)

Instructions

  1. Prepare the salmon marinade: In a large bowl, mix the cubed salmon with 1/4 cup soy sauce, 1 tablespoon sesame oil, 1 tablespoon maple syrup, 1 teaspoon garlic powder, and 2 tablespoons brown sugar. Stir well to coat and set aside to marinate.
  2. Season pineapple: In a separate bowl, toss the pineapple chunks with 1 tablespoon soy sauce to add flavor.
  3. Preheat air fryer: Set your air fryer to 400℉ (200℃) and let it come to temperature for even cooking.
  4. Air fry salmon and pineapple: Spray the air fryer basket with oil spray. Place salmon cubes and seasoned pineapple chunks in the basket and air fry at 400℉ (200℃) for 5-8 minutes depending on salmon thickness. The salmon is done when it reaches 125℉ (51℃) internally. Remove salmon and pineapple and set aside.
  5. Prepare broccoli: Season broccoli florets with olive oil, salt, pepper, and garlic powder. Add 1/2 cup water to the bottom of the air fryer basket to prevent drying out.
  6. Air fry broccoli: Air fry broccoli at 375℉ (190℃) for 5-8 minutes until bright green inside and slightly crisped on top. Timing varies with air fryer model and basket crowding.
  7. Make teriyaki sauce: Combine 3 tablespoons low sodium soy sauce, 1 teaspoon sesame seed oil, 1/2 teaspoon rice vinegar, microplaned garlic and ginger, and 2 tablespoons brown sugar in a mason jar or microwave-safe bowl. Shake or whisk together then microwave in 30-second increments, stirring until thickened to desired consistency.
  8. Assemble bowls: In each serving bowl, add 3/4 cup cooked plain rice, then top with salmon cubes and about 1/2 cup pineapple chunks.
  9. Finish and serve: Drizzle the homemade teriyaki sauce over the salmon and pineapple. Garnish with sesame seeds if desired and enjoy your meal.
