Description

This Swedish Meatball Noodle Bake is a comforting and hearty casserole combining tender homemade Swedish meatballs with creamy sauce, egg noodles, and melted Swiss cheese. Perfect for a family dinner, this easy-to-make dish blends classic Scandinavian flavors with the convenience of a baked pasta meal.

Ingredients

Scale

Meatballs

  • 1 lb ground beef
  • 1 large egg, beaten
  • ½ cup breadcrumbs
  • ½ onion, grated
  • ½ tsp garlic powder
  • ¼ tsp ground nutmeg
  • 1 tsp Kosher salt
  • ½ tsp freshly ground black pepper
  • 2 tbsp olive oil

Noodles & Sauce

  • 2 ½ cups egg noodles
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 cup heavy cream
  • 1 ½ cups Swiss cheese, grated
  • Kosher salt and freshly ground black pepper, to taste

Garnish

  • Fresh parsley, chopped, for serving

Instructions

  1. Preheat & Prep: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with nonstick spray to prevent sticking during baking.
  2. Make the Meatballs: In a large bowl, combine the ground beef, breadcrumbs, beaten egg, grated onion, garlic powder, ground nutmeg, salt, and black pepper. Mix until just combined, then shape the mixture into meatballs about 1 ½ tablespoons each.
  3. Brown the Meatballs: Heat the olive oil in a skillet over medium-high heat. Cook the meatballs in batches, browning them on all sides. Once browned, remove them from the skillet and set aside.
  4. Cook Noodles: Boil a large pot of salted water and cook the egg noodles for 2 minutes less than the package instructions to ensure they stay firm during baking. Drain and set aside.
  5. Prepare the Sauce: In the same skillet used for the meatballs, add beef broth, Worcestershire sauce, and heavy cream. Simmer the mixture gently for about 10 minutes, stirring occasionally, until the sauce thickens slightly. Season with additional salt and pepper to taste.
  6. Assemble & Bake: In the greased baking dish, spread the cooked noodles evenly. Top with the browned meatballs, then pour the creamy sauce over everything. Sprinkle the grated Swiss cheese evenly on top.
  7. Bake: Place the baking dish in the preheated oven and bake for 20 minutes, or until the cheese is melted, bubbly, and slightly golden. Once baked, let the casserole rest for 5 minutes before serving.
  8. Serve: Garnish the baked casserole with freshly chopped parsley for a burst of color and fresh flavor. Serve warm and enjoy your comforting Swedish Meatball Noodle Bake!

Notes

  • Make sure not to overcook noodles before baking; they should be slightly undercooked to prevent mushiness.
  • For a lower-fat option, substitute ground beef with ground turkey or use a reduced-fat cream.
  • Grating the onion finely helps the flavor integrate better into the meatballs.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • For added texture, consider adding a crunchy breadcrumb topping mixed with melted butter before baking.
