Description

Delight in these luscious Stuffed Chocolate Cheesecake Strawberries, featuring fresh firm strawberries filled with a smooth and creamy chocolate cheesecake mixture, topped with mini chocolate chips. This no-bake, elegant treat is perfect for parties, desserts, or special occasions, combining the natural sweetness of strawberries with rich and fluffy chocolate cream cheese filling.

Ingredients

Scale

Strawberries

  • 24 medium fresh firm strawberries (1 ½2 lbs, depending on size and filling)

Chocolate Cheesecake Filling

  • 8 oz block cream cheese, room temperature
  • ½ cup powdered sugar
  • 2 Tbsp cocoa powder
  • 1 tsp vanilla extract

Topping

  • Mini chocolate chips (optional, for topping)

Instructions

  1. Prepare Strawberries: Rinse the strawberries thoroughly under cold water, then drain and dry them completely using a salad spinner or towels to remove all excess moisture. This ensures the filling adheres properly and prevents the strawberries from becoming soggy.
  2. Trim Stems: Cut off the stems so each strawberry can stand upright on their cut side, providing stability when filling them.
  3. Hollow Strawberries: Using a sharp knife, carefully cut a deep “X” into the tip of each strawberry without slicing all the way through, creating a pocket suitable for the cheesecake filling.
  4. Make Filling: In a mixing bowl, combine softened cream cheese, powdered sugar, cocoa powder, and vanilla extract. Beat with a hand mixer until the mixture is smooth, fluffy, and well incorporated to create a creamy chocolate cheesecake filling.
  5. Fill Strawberries: Gently open each strawberry at the sliced “X” and pipe the chocolate filling inside using a pastry bag fitted with a star tip (Wilton 2D or 1M). If a piping bag is unavailable, use a zip-top plastic bag by cutting off a small corner and squeezing the filling into the strawberries carefully.
  6. Garnish: Top each stuffed strawberry with mini chocolate chips, adding extra texture and flavor.
  7. Chill: Place the stuffed strawberries in the refrigerator and chill for at least 1 hour before serving to allow the filling to set and flavors to meld beautifully.

Notes

  • Ensure strawberries are completely dry before stuffing to avoid sogginess.
  • Wrap unused stuffed strawberries with plastic wrap while chilling to keep them fresh.
  • Use room temperature cream cheese for easier mixing and a smoother filling.
  • Mini chocolate chips are optional but recommended for added texture.
  • Serve chilled for best flavor and texture.
