Ingredients
Scale
Filling
- 1 cup strawberries, roughly diced
- 1 sleeve graham cracker sheets (about 9 full sheets)
- 3/4 cup almond flour
Chocolate Coating
- 1 cup white chocolate chips
- 2 teaspoons coconut oil
Instructions
- Crush Graham Crackers: Process graham cracker sheets in a food processor until finely crushed with no large chunks left, creating a fine crumb base for the filling.
- Add Strawberries: Add the roughly diced strawberries to the food processor and pulse until the strawberries are finely diced but not pureed, maintaining some texture.
- Combine with Almond Flour: Add the almond flour to the mixture and pulse again until the mixture forms a cohesive filling that can be shaped into balls.
- Form and Freeze Balls: Scoop the mixture into 16 equal-sized balls and place them on a lined baking sheet. Freeze these for 20 to 30 minutes to help them set and firm up.
- Melt Chocolate Coating: In a microwave-safe bowl, melt the white chocolate chips and coconut oil together in 30-second intervals, stirring well after each session until the mixture is smooth and fully melted.
- Coat the Balls: Dip each frozen ball into the melted white chocolate, ensuring it is fully covered, then place it back on the lined baking sheet.
- Set Chocolate: Return the coated balls to the freezer for 5 minutes until the chocolate hardens completely.
- Store and Serve: Keep the strawberry shortcake bites refrigerated and serve them chilled for the best texture and flavor.
Notes
- Use fresh ripe strawberries for the best flavor and natural sweetness.
- Make sure not to puree the strawberries completely to retain a pleasant texture in the filling.
- Freezing times are important to keep the shape of the bites when dipping in chocolate.
- These bites can be stored in the refrigerator for up to 3 days for optimal freshness.
- For a dairy-free version, ensure the white chocolate chips are vegan-friendly or substitute with dark chocolate chips.
