Description

This Slow Cooker Beef Stroganoff is a comforting and easy-to-make dish featuring tender beef stew meat cooked low and slow in a savory gravy blend, then enriched with creamy sour cream, and served over perfectly cooked egg noodles. Perfect for a hearty weeknight dinner with minimal prep.

Ingredients

Scale

Beef and Sauce

  • 2 lbs beef stew meat
  • 1 (0.87-ounce) packet brown gravy mix
  • 1 (1-ounce) packet au jus mix
  • 1 1/2 cups water
  • 1/2 cup sour cream

Side

  • 1 (8-ounce) package egg noodles

Instructions

  1. Prepare the slow cooker: Spray a 4 to 6-quart slow cooker with nonstick cooking spray to prevent sticking. In the slow cooker, whisk together the brown gravy mix, au jus mix, and water until combined.
  2. Add the beef: Place the beef stew meat into the slow cooker and stir to coat the meat evenly with the gravy mixture. Try to submerge the beef in the liquid as much as possible to ensure even cooking. Cover the slow cooker.
  3. Cook the beef: Cook on low for 6 to 8 hours or on high for about 5 hours until the beef is tender and easy to shred with a fork.
  4. Prepare the sour cream mixture: About 30 minutes before serving, remove approximately 1/2 cup of the gravy from the slow cooker and place it in a small bowl. Stir in the sour cream until smooth, then return this mixture to the slow cooker. Stir well to combine.
  5. Finish cooking: Cover and continue cooking on high for about 20 minutes to allow the flavors to meld and the sauce to thicken slightly.
  6. Cook the noodles: Meanwhile, cook the egg noodles following the package instructions until al dente, then drain.
  7. Serve: Serve the tender beef and creamy sauce over the cooked noodles. Optionally, you may add the noodles directly to the slow cooker and stir to combine before serving.

Notes

  • For a thicker sauce, you can use less water or cook uncovered for the last 30 minutes to reduce the liquid.
  • Sour cream should be added toward the end to prevent curdling.
  • Using a slow cooker liner can help with easy cleanup.
  • Feel free to add sautéed mushrooms or onions with the beef for extra flavor.
  • This dish pairs well with steamed vegetables or a fresh green salad.
