Shrimp Filling
- 1 lb (450g) raw shrimp, peeled & deveined
- 2 green onions, finely chopped
- 1 tbsp grated ginger
- 1 clove garlic, minced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1/2 tsp salt
- 1/4 tsp white pepper
For Layering
- 20–24 round dumpling wrappers (or square wonton wrappers)
- 1/2 cup finely shredded napa cabbage (optional, lightly squeezed dry)
- Oil for greasing pan
Optional Topping/Sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp chili oil
- 1/2 tsp sugar
- Extra green onions or sesame seeds for garnish
Instructions
- Prepare the Shrimp Filling: Finely chop the raw shrimp by hand or pulse briefly in a food processor, keeping some texture for bite. Combine the chopped shrimp with green onions, grated ginger, minced garlic, soy sauce, sesame oil, cornstarch, salt, and white pepper. Mix well until the mixture becomes slightly sticky, ensuring the flavors meld together.
- Assemble the “Lasagna”: Lightly oil an 8×8-inch heatproof pan or a small round cake pan that fits inside your steamer to prevent sticking. Arrange a single layer of dumpling wrappers at the bottom, overlapping slightly to cover the surface. Spread a thin, even layer of the shrimp filling over the wrappers, then sprinkle a small amount of the shredded napa cabbage if using. Repeat these layers—wrappers, shrimp filling, and cabbage—until you use all the filling, finishing with a top layer of wrappers. Lightly brush the top wrapper layer with oil to keep it moist during steaming.
- Steam the Lasagna: Bring water to a boil in a steamer setup. Carefully place the prepared pan inside the steamer, cover it with a lid, and steam the layered dumpling for 20 to 25 minutes. The steaming process cooks the shrimp filling through and softens the dumpling wrappers, resulting in tender, layered dumpling lasagna.
- Rest and Slice: After steaming, let the dish rest for about 5 minutes to firm up slightly and cool down just enough for easier slicing. Gently slice the steamed dumpling lasagna into squares or wedges for serving.
- Prepare and Serve with Dumpling Sauce: Mix soy sauce, rice vinegar, sugar, and chili oil to create a simple dipping sauce. Drizzle the sauce over the sliced lasagna or serve it as a side condiment. Garnish with additional chopped green onions or sesame seeds if desired for extra flavor and presentation.
