Instructions

  1. Preheat Oven: Set your oven to 425°F (220°C). This high temperature ensures the potatoes cook quickly and caramelize nicely.
  2. Prepare Potatoes: In a large bowl, toss the diced Yukon gold potatoes with 2 teaspoons of oil and the packet of Lipton onion soup mix, making sure they are evenly coated.
  3. Bake Potatoes: Spread the coated potatoes in a single layer on a large, rimmed baking sheet. Bake in the preheated oven for 20 minutes to start crisping and cooking them.
  4. Season Chicken: While the potatoes bake, season the chicken breasts evenly with 2 to 3 teaspoons of your chosen chicken seasoning or rub. Set aside.
  5. Prepare Green Beans: In a separate large bowl, drizzle the green beans with 1 teaspoon oil and season with salt and pepper. Toss well to coat all the beans.
  6. Add Chicken and Green Beans: After the initial 20 minutes, carefully remove the baking sheet. Push the potatoes to one side and arrange the seasoned chicken breasts and green beans on the empty side in an even layer.
