Instructions
- Rinse and Soak Rice: Rinse the rice under cold water thoroughly to remove excess starch and soak it in a bowl for at least 30 minutes to ensure fluffier texture when cooked.
- Caramelize Onions: Heat olive oil in a large pot over medium heat, then add the thinly sliced onions. Sauté, stirring frequently, until the onions turn golden brown and caramelized, which infuses the dish with deep flavor.
- Cook Lentils with Onions: Add the rinsed and drained brown lentils to the pot with the caramelized onions. Stir continuously for about 2 minutes to combine flavors and slightly toast the lentils.
- Add Water and Bring to Boil: Pour in 4.5 cups of water and increase the heat to bring the mixture to a boil, preparing it for cooking the grains and lentils evenly.
- Add Rice and Seasonings: Drain the soaked rice and add it to the pot along with salt and cumin. Stir gently to distribute seasonings without breaking the rice grains.
- Simmer Covered: Reduce the heat to low, cover the pot, and allow the mixture to simmer gently for 20-25 minutes, until the rice is tender and all the water has been absorbed.
