Ingredients
Scale
Base
- 2 cups frozen tater tots
Sausage
- ½ pound ground breakfast sausage
Egg Mixture
- 6 large eggs
- ½ cup low fat cottage cheese (2%)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup freshly grated mozzarella cheese
Garnish
- Freshly chopped parsley (optional)
Instructions
- Preheat and Prepare Base: Preheat the oven to 400°F. Grease a 9-inch deep-dish pie dish with butter. Place the frozen tater tots evenly over the bottom of the pie dish. Bake for 15 minutes until slightly crispy.
- Mash Tater Tots: After baking, remove the dish and mash the tater tots evenly to create a compact layer covering the bottom and sides of the pie dish.
- Lower Oven Temperature: Reduce the oven temperature to 350°F to prepare for baking the quiche.
- Cook Sausage: In a skillet over medium to medium-high heat, cook and crumble the ground breakfast sausage thoroughly. Remove from heat and let it cool slightly.
- Mix Egg Filling: In a large bowl, whisk together the eggs, low-fat cottage cheese, salt, and black pepper until thoroughly combined. Stir in the shredded mozzarella and the slightly cooled cooked sausage.
- Assemble and Bake: Pour the egg and sausage mixture evenly over the mashed tater tot base in the pie dish. Bake at 350°F for 30 minutes or until the quiche’s center is set.
- Cool and Garnish: Remove the quiche from the oven and allow it to cool for at least 5 minutes to set completely. Garnish with freshly chopped parsley if desired before slicing and serving.
Notes
- Make sure to fully cook the sausage to avoid any undercooked meat in the quiche.
- Mashing the tater tots helps form a sturdy crust-like base to hold the filling together.
- Use freshly grated mozzarella for best melting texture and flavor.
- Let the quiche rest before slicing for cleaner cuts and better texture.
- This dish can be prepared ahead and reheated gently in the oven.
