Description

This Pineapple Upside Down Cake Fudge is a delightful no-bake dessert combining the rich, creamy texture of white chocolate fudge with the tropical flavors of crushed pineapple and maraschino cherries. Inspired by the classic upside-down cake, this fudge is easy to prepare, requiring simple melting and mixing steps, then chilling until firm. Perfect for parties or a sweet treat, each bite offers a nostalgic blend of fruity sweetness and smooth vanilla creaminess.

Ingredients

Scale

Fudge Base

  • 2 cups white chocolate chips
  • 1 can (14 oz) sweetened condensed milk
  • ¼ cup unsalted butter
  • 1 box (3.4 oz) instant vanilla pudding mix
  • ¾ cup powdered sugar
  • 1 tsp vanilla extract

Fruit Toppings

  • ½ cup crushed pineapple, well-drained
  • 8-10 maraschino cherries, halved and patted dry

Instructions

  1. Prepare the Baking Dish: Line an 8×8-inch baking dish with parchment paper and lightly grease it to prevent sticking and make it easy to remove the fudge later.
  2. Melt the Fudge Base: In a saucepan over low heat, combine the white chocolate chips, sweetened condensed milk, and unsalted butter. Stir continuously until everything is completely melted and smooth, ensuring no lumps remain.
  3. Mix Ingredients: Remove the saucepan from heat. Stir in the instant vanilla pudding mix, powdered sugar, and vanilla extract until the mixture is fully combined and creamy.
  4. Add the Fruit: Gently fold in the well-drained crushed pineapple and the halved, patted-dry maraschino cherries, distributing the fruit evenly throughout the fudge mixture.
  5. Set the Fudge: Pour the fudge mixture into the prepared baking dish. Smooth the top with a spatula for an even layer. Refrigerate for at least 4 hours, or until the fudge is firm and set.
  6. Slice & Serve: Once the fudge is fully chilled and firm, lift it out of the dish using the parchment paper. Cut into 16 squares and serve chilled for the best texture and flavor.

Notes

  • Ensure the pineapple is well-drained to prevent excess moisture from affecting the fudge’s consistency.
  • Pat the cherries dry to avoid excess syrup making the fudge soggy.
  • You can substitute white chocolate chips with white chocolate bars chopped into small pieces if preferred.
  • Store the fudge in an airtight container in the refrigerator for up to one week.
  • For a decorative touch, arrange additional cherries on top before chilling.
