Description

These Peanut Butter Choc Chip S’mores combine the classic flavors of peanut butter cookies and gooey marshmallow with rich chocolate for a delightful twist on the traditional s’more.   • 250 g creamy peanut butter
  • 200 g granulated sugar
  • 1 large egg
  • 5 ml vanilla extract
  • 135 g semi-sweet chocolate chips

For the S’mores Assembly

  • 18 peanut butter chocolate chip cookies (baked)
  • 9 squares dark chocolate
  • 9 large marshmallows


Instructions

  1. Preheat Oven: Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Mix Dough: In a stand mixer bowl, combine the creamy peanut butter, granulated sugar, egg, and vanilla extract. Mix thoroughly until the dough is smooth and well incorporated. Gently fold in the semi-sweet chocolate chips to distribute them evenly without deflating the batter.
  3. Shape Cookies: Measure about 1 tablespoon of dough per cookie, roll each into a ball, and place them on the prepared baking sheet. Flatten each ball slightly, maintaining approximately 2.5 cm (1 inch) gaps between cookies to allow spreading during baking.
  4. Bake Cookies: Bake the cookies for approximately 10 minutes or until the edges turn golden brown, indicating they are cooked but still soft inside. Remove from the oven and allow the cookies to cool completely on a wire rack. Cooling is important to maintain the cookie’s structure during assembly.
  5. Assemble S’mores: Place 9 cookies upside down on a surface. Top each cookie with a square of dark chocolate. Roast each marshmallow over an open flame or using a kitchen torch until golden and melty. Carefully place each toasted marshmallow atop the chocolate squares. Finish by placing another cookie on top, gently pressing to create a sandwich without squashing the marshmallow.
