Description

These No-Bake Chocolate Mousse Bars are a decadent yet easy dessert featuring a chocolate cookie crumb crust, fluffy chocolate mousse filling, and a smooth chocolate ganache topping. Perfect for any occasion, they require no baking and come together quickly, then chill for a few hours to set into rich, creamy bars.

Ingredients

Scale

Crust

  • 2 cups chocolate cookie crumbs
  • ½ cup melted butter

Mousse Filling

  • 1 ½ cups heavy cream
  • 1 cup semisweet chocolate chips, melted
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Chocolate Layer

  • ¾ cup semisweet chocolate chips
  • ½ cup heavy cream

Garnish

  • ½ cup whipped cream
  • Chocolate shavings or cocoa powder (optional)

Instructions

  1. Prepare the Crust: In a bowl, mix the chocolate cookie crumbs with the melted butter until the crumbs are evenly coated. Press this mixture firmly into the bottom of an 8×8-inch dish to form the crust. Refrigerate the crust while preparing the mousse filling.
  2. Make the Mousse: In a mixing bowl, beat the heavy cream, melted chocolate chips, powdered sugar, and vanilla extract together until the mixture becomes fluffy and light. Spread this mousse evenly over the chilled crust. Refrigerate again while preparing the chocolate layer.
  3. Add the Chocolate Layer: Warm the heavy cream until it is hot but not boiling. Pour the warm cream over the semisweet chocolate chips and let it sit for a minute to melt the chocolate. Stir gently until smooth and glossy. Spread this chocolate ganache evenly over the mousse layer.
  4. Chill and Set: Place the assembled bars in the refrigerator to chill for at least 4 hours, or until fully set.
  5. Garnish and Serve: Before serving, top the bars with whipped cream and optionally sprinkle with chocolate shavings or a dusting of cocoa powder. Slice into bars and enjoy this rich and creamy no-bake dessert.

Notes

  • Use a piping bag for the whipped cream garnish for a professional look.
  • Ensure the heavy cream for the chocolate layer is warm but not boiling to prevent the chocolate from seizing.
  • Chocolate cookie crumbs can be made by finely crushing chocolate cookies in a food processor.
  • Bars can be stored covered in the refrigerator for up to 3 days.
  • For a firmer crust, chill the crust longer before adding mousse.
