Description

These festive peppermint sugar cookies combine the classic flavor of Betty Crocker sugar cookie mix with a refreshing peppermint twist. Infused with peppermint extract and vibrant green food coloring, and studded with creme de menthe baking chips and semi-sweet chocolate chips, these cookies are perfect for holiday celebrations or anytime you want a cool, minty treat. Soft, chewy, and bursting with flavor, they’re easy to make and sure to delight.

Ingredients

Scale

Cookie Dough

  • 1 package Betty Crocker sugar cookie mix
  • 1/2 cup (1 stick) softened butter
  • 1 teaspoon peppermint extract
  • 1 large egg
  • Green food coloring, a few drops

Mix-ins

  • 1/2 cup creme de menthe baking chips
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Prepare the dough: In a large bowl, combine the Betty Crocker sugar cookie mix, softened butter, peppermint extract, egg, and green food coloring. Mix thoroughly until a soft, uniform dough forms.
  2. Add mix-ins: Gently fold in the creme de menthe baking chips and semi-sweet chocolate chips to evenly distribute them throughout the dough.
  3. Scoop the cookies: Using a small cookie scoop, drop rounded spoonfuls of the dough onto a baking sheet lined with parchment, spacing each about 2 inches apart to allow for slight spreading.
  4. Bake: Preheat the oven to 350°F (175°C). Bake the cookies for approximately 10 minutes or until the edges are set and the centers appear just set but still soft.
  5. Cool and serve: Remove the cookies from the oven and allow them to cool on the baking sheet for about 3 minutes before transferring to a wire rack or serving plate. Enjoy warm or at room temperature.

Notes

  • For stronger peppermint flavor, add an additional 1/2 teaspoon of peppermint extract.
  • You can substitute creme de menthe chips with white chocolate chips for a milder mint flavor.
  • Do not overbake to keep cookies soft and chewy.
  • If you don’t have a cookie scoop, use two spoons to form uniform dough portions.
  • Store cookies in an airtight container at room temperature for up to 5 days.
