Ingredients
Scale
Cookie Dough
- 1 package Betty Crocker sugar cookie mix
- 1/2 cup (1 stick) softened butter
- 1 teaspoon peppermint extract
- 1 large egg
- Green food coloring, a few drops
Mix-ins
- 1/2 cup creme de menthe baking chips
- 1/2 cup semi-sweet chocolate chips
Instructions
- Prepare the dough: In a large bowl, combine the Betty Crocker sugar cookie mix, softened butter, peppermint extract, egg, and green food coloring. Mix thoroughly until a soft, uniform dough forms.
- Add mix-ins: Gently fold in the creme de menthe baking chips and semi-sweet chocolate chips to evenly distribute them throughout the dough.
- Scoop the cookies: Using a small cookie scoop, drop rounded spoonfuls of the dough onto a baking sheet lined with parchment, spacing each about 2 inches apart to allow for slight spreading.
- Bake: Preheat the oven to 350°F (175°C). Bake the cookies for approximately 10 minutes or until the edges are set and the centers appear just set but still soft.
- Cool and serve: Remove the cookies from the oven and allow them to cool on the baking sheet for about 3 minutes before transferring to a wire rack or serving plate. Enjoy warm or at room temperature.
Notes
- For stronger peppermint flavor, add an additional 1/2 teaspoon of peppermint extract.
- You can substitute creme de menthe chips with white chocolate chips for a milder mint flavor.
- Do not overbake to keep cookies soft and chewy.
- If you don’t have a cookie scoop, use two spoons to form uniform dough portions.
- Store cookies in an airtight container at room temperature for up to 5 days.
