Ingredients
Scale
Wrap Filling
- 2 cups Cooked Chicken Breast (Shredded)
- 3 cloves Minced Garlic
- 4 oz Cream Cheese (Softened)
- 1 cup Shredded Mozzarella Cheese (Freshly shredded)
- 1 cup Shredded Cheddar Cheese
- 2 tbsp Fresh Parsley (Chopped)
- To taste Salt
- To taste Pepper
- 1 cup Baby Spinach (Optional)
Wraps and Cooking
- 4 pieces Low-carb Tortillas (Recommended brand: Mission Carb Balance)
- 2 tbsp Olive Oil (For frying)
Instructions
- Preheat skillet: Preheat a skillet or grill pan over medium heat and add a drizzle of olive oil to prevent sticking and prepare for cooking the wraps.
- Warm tortillas: Warm the low-carb tortillas in the microwave for about 10-15 seconds to make them pliable and easier to roll without tearing.
- Prepare the filling: In a mixing bowl, combine the shredded cooked chicken, shredded mozzarella, shredded cheddar, softened cream cheese, minced garlic, chopped parsley, salt, and pepper. Mix thoroughly until evenly combined.
- Assemble wraps: Divide the chicken and cheese mixture evenly, using approximately 1/2 cup per tortilla. If desired, add baby spinach inside the wrap before rolling.
- Roll wraps tightly: Roll each tortilla tightly around the filling, tucking in the sides as you go to form a secure wrap that won’t unravel during cooking.
- Cook wraps: Place each wrap seam-side down in the preheated skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese inside has melted.
- Serve: Remove wraps from the skillet, slice each in half diagonally for presentation, and serve hot for the best taste and texture.
Notes
- Use low-carb tortillas to maintain the low-carb profile of this dish.
- Softening the cream cheese beforehand ensures easy mixing and a creamy filling.
- Adding baby spinach is optional but adds a nice fresh flavor and extra nutrients.
- Cook the wraps seam-side down first to help seal them and prevent unraveling.
- Serve immediately to enjoy the gooey melted cheese and crispy tortilla exterior.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated in a skillet for best texture.
