Description

A delightful twist on classic French toast, featuring slices of lemon pound cake cooked to golden perfection and skewered with fresh mixed berries. These Lemon Pound Cake French Toast Skewers make a fun and flavorful breakfast or brunch treat that balances the richness of cake with the bright zestiness of berries.

Ingredients

Scale

For the French Toast

  • 1 loaf Lemon Pound Cake
  • 4 Eggs (lightly beaten)
  • 2 teaspoons Oil + more if needed

For the Skewers and Garnish

  • 4 cups Fresh berries (strawberries, blueberries, raspberries, or blackberries)
  • 2 tablespoons Syrup
  • Powdered Sugar for garnish

Instructions

  1. Heat the oil: Warm 1 teaspoon of oil in a frying pan over medium heat, preparing it for cooking the French toast slices.
  2. Prepare the pound cake slices: Cut the lemon pound cake into 1 ½-inch thick slices. Dip each slice into the lightly beaten eggs, ensuring each slice is fully soaked and saturated.
  3. Cook the French toast: Place the egg-soaked pound cake slices in the heated pan. Cook for about 2 minutes on one side until golden brown, then flip and cook the other side for another 2 minutes. Halfway through cooking, add the remaining teaspoon of oil to the pan to prevent sticking and promote even browning.
  4. Cut the cooked slices: Once the French toast slices are cooked, cut each slice into three strips, then cut each strip in half to create six small squares per slice, perfect for skewering.
  5. Assemble the skewers: Thread the pound cake pieces onto skewers, alternating between French toast squares and fresh berries. Use 2 to 3 pieces of French toast per skewer, adding berries in between to achieve a balanced flavor and colorful presentation.
  6. Add finishing touches: Drizzle the assembled skewers with syrup and dust lightly with powdered sugar to enhance the sweetness and visual appeal.

Notes

  • Use fresh berries for the best flavor and texture; you can mix strawberries, blueberries, raspberries, and blackberries according to preference.
  • Adjust the syrup amount or substitute with honey or maple syrup based on taste.
  • Ensure oil is hot enough before cooking to avoid soggy French toast.
  • For a dairy-free version, select a lemon pound cake made without butter or milk.
  • Serve immediately after preparation for optimal taste and texture.
