Instructions
- Preheat oven and prepare dish: Preheat your oven to 375°F and grease a 9×13-inch baking dish to prevent sticking.
- Cook the sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook it, breaking it apart, until browned and fully cooked, about 6–8 minutes. Transfer the cooked sausage to a plate and set aside.
- Sauté mushrooms and spinach: Using the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes until browned. Stir in the fresh spinach and sauté until wilted. Remove the skillet from heat.
- Combine eggs and seasoning: In a large bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and well combined.
- Mix all ingredients: Add the cooked sausage, sautéed mushrooms and spinach, along with the shredded mozzarella cheese, into the egg mixture. Stir well to combine everything evenly.
- Pour into baking dish: Pour the mixture into your prepared 9×13-inch baking dish and smooth the top evenly with a spatula.
- Bake: Bake in the preheated oven for 30–35 minutes or until the center is just set and the edges are golden brown.
- Cool and serve: Let the egg bake cool for about 5 minutes before slicing into 12 squares and serving.
