Description

This Hearty Sausage Spinach Mushroom Egg Bake is a delicious and protein-packed breakfast or brunch dish featuring Italian sausage, fresh spinach, sautéed mushrooms, and melted mozzarella cheese baked into a fluffy egg base. Perfectly seasoned and baked to golden perfection, it serves 12 squares ideal for family gatherings or meal prep.

Ingredients

Scale

Egg Mixture

  • 10 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Meat

  • 1 pound Italian sausage

Vegetables

  • 3 cups fresh spinach
  • 2 cups sliced mushrooms

Cheese

  • 1 cup shredded mozzarella cheese

Other

  • 2 tablespoons olive oil

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 375°F and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook the sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook it, breaking it apart, until browned and fully cooked, about 6–8 minutes. Transfer the cooked sausage to a plate and set aside.
  3. Sauté mushrooms and spinach: Using the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes until browned. Stir in the fresh spinach and sauté until wilted. Remove the skillet from heat.
  4. Combine eggs and seasoning: In a large bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and well combined.
  5. Mix all ingredients: Add the cooked sausage, sautéed mushrooms and spinach, along with the shredded mozzarella cheese, into the egg mixture. Stir well to combine everything evenly.
  6. Pour into baking dish: Pour the mixture into your prepared 9×13-inch baking dish and smooth the top evenly with a spatula.
  7. Bake: Bake in the preheated oven for 30–35 minutes or until the center is just set and the edges are golden brown.
  8. Cool and serve: Let the egg bake cool for about 5 minutes before slicing into 12 squares and serving.

Notes

  • Use fresh herbs like parsley or basil to add extra flavor if desired.
  • Substitute mozzarella with cheddar or your preferred cheese for different taste variations.
  • The bake can be prepared a day ahead and refrigerated; reheat before serving.
  • For a vegetarian version, omit the sausage and add extra mushrooms or other vegetables.
  • Ensure eggs are fully cooked before serving to avoid runny centers.
