Instructions
- Preheat and Prepare Dish: Preheat your oven to 375°F and grease a 9×13-inch baking dish to prevent sticking.
- Cook Sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook for about 6 to 8 minutes, stirring occasionally, until browned and fully cooked. Transfer the sausage to a plate.
- Sauté Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced mushrooms and cook for 5 minutes until browned. Stir in the fresh spinach and sauté just until wilted. Remove the skillet from heat.
- Make Egg Mixture: In a large bowl, whisk together the 10 large eggs, 1/2 cup of milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth and fully combined.
- Combine Ingredients: Add the cooked sausage, sautéed mushrooms and spinach, and shredded mozzarella cheese to the egg mixture. Stir well to evenly combine all ingredients.
- Assemble Bake: Pour the combined mixture into the prepared baking dish and smooth the top evenly with a spatula.
- Bake: Place the baking dish in the preheated oven and bake for 30 to 35 minutes, or until the center is just set and the edges turn golden brown.
- Cool and Serve: Remove the dish from the oven and let it cool for 5 minutes before slicing into 12 servings and serving.
