This Hearty Sausage Spinach Mushroom Egg Bake is a delicious and protein-packed breakfast casserole perfect for family gatherings or meal prepping. Featuring savory Italian sausage, fresh spinach, mushrooms, and gooey mozzarella cheese baked to golden perfection, it’s an easy-to-make dish that satisfies the whole crowd.

Ingredients

Scale

Egg Mixture

  • 10 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Meat

  • 1 pound Italian sausage

Vegetables

  • 3 cups fresh spinach
  • 2 cups sliced mushrooms

Cheese

  • 1 cup shredded mozzarella cheese

Other

  • 2 tablespoons olive oil

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook for about 6 to 8 minutes, stirring occasionally, until browned and fully cooked. Transfer the sausage to a plate.
  3. Sauté Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced mushrooms and cook for 5 minutes until browned. Stir in the fresh spinach and sauté just until wilted. Remove the skillet from heat.
  4. Make Egg Mixture: In a large bowl, whisk together the 10 large eggs, 1/2 cup of milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth and fully combined.
  5. Combine Ingredients: Add the cooked sausage, sautéed mushrooms and spinach, and shredded mozzarella cheese to the egg mixture. Stir well to evenly combine all ingredients.
  6. Assemble Bake: Pour the combined mixture into the prepared baking dish and smooth the top evenly with a spatula.
  7. Bake: Place the baking dish in the preheated oven and bake for 30 to 35 minutes, or until the center is just set and the edges turn golden brown.
  8. Cool and Serve: Remove the dish from the oven and let it cool for 5 minutes before slicing into 12 servings and serving.

Notes

  • To make this dish ahead, prepare the mixture and refrigerate overnight before baking the next morning.
  • Use turkey sausage or a plant-based sausage alternative to make it leaner or vegetarian-friendly.
  • Add other fresh vegetables like bell peppers or onions for extra flavor and nutrition.
  • Check for doneness by inserting a toothpick into the center; it should come out clean when fully baked.
  • For a dairy-free option, substitute mozzarella with a dairy-free cheese and milk with an unsweetened plant-based milk.
