Description

This Healthy Spinach Artichoke Dip is a delicious and guilt-free appetizer that combines tender artichoke hearts, nutrient-rich spinach, and creamy Greek yogurt with Parmesan cheese for a savory treat. Perfect served warm or cold, it’s a versatile dish ideal for dipping with baguette slices, tortilla chips, or fresh vegetables. With simple ingredients and quick preparation, this dip offers a lighter alternative to traditional versions without sacrificing flavor.

Ingredients

Scale

Main Ingredients

  • 1 can artichoke hearts (14 oz)
  • 1 cup frozen spinach or kale (60g) (can be omitted)
  • 2/3 cup Parmesan cheese or nutritional yeast (60g)
  • 1/2 cup Greek yogurt or dairy free alternative (120g)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder

Instructions

  1. Preheat the oven: If you choose to bake the dip, preheat your oven to 350° Fahrenheit (177° Celsius) to ensure even cooking and a nicely browned top.
  2. Prepare the vegetables: Drain the artichoke hearts thoroughly but do not rinse them. Squeeze out any excess moisture from the frozen spinach. Roughly chop both the artichokes and spinach to blend them well into the dip.
  3. Mix ingredients: Place the artichokes, spinach, Parmesan cheese, Greek yogurt, salt, and garlic powder into a heat-safe bowl. Stir everything until completely combined and the mixture is uniform.
  4. Serve cold or heat: You can enjoy the dip immediately as a cold dish. Alternatively, bake it on the center rack of your oven for about 20 minutes until it’s hot, bubbly, and lightly browned on top. For quicker heating, microwave the dip for 5 minutes, stirring halfway through to evenly warm it.
  5. Serve: Once heated or chilled, serve the dip hot or cold with toasted baguette slices, tortilla chips, or a variety of raw vegetables for dipping.
  6. Store leftovers: Place any leftover dip in an airtight container and refrigerate. Consume within five days for best freshness and flavor.

Notes

  • You can omit the spinach or kale if desired, but they add important nutrients and color to the dip.
  • Using nutritional yeast instead of Parmesan cheese makes the recipe dairy-free and suitable for vegans when paired with a dairy-free yogurt alternative.
  • If microwaving, stir the dip halfway through heating to ensure it warms evenly.
  • This dip is great for parties and can be prepared ahead of time and heated just before serving.
  • For a thicker texture, strain more liquid from the spinach before mixing.
