Ingredients
Scale
Filling
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1/2 cup carrots, finely diced
- 2 cloves garlic, minced
- 1 pound ground beef
- 2 tablespoons tomato paste
- 1/3 cup beef broth
- 1 tablespoon Worcestershire sauce
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup frozen peas
Dough and Topping
- 2 refrigerated pie crusts
- 1 large egg, beaten
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Sauté Vegetables: Heat the olive oil in a skillet over medium heat. Add the finely chopped onion and diced carrots, cooking for about 4 to 5 minutes until the vegetables are softened.
- Add Garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, enhancing the aroma and flavor of the filling.
- Brown Ground Beef: Add the ground beef to the skillet. Cook until fully browned, breaking it apart with a spoon as it cooks. Once done, drain any excess grease to keep the filling from being too oily.
- Combine Flavorings: Stir in the tomato paste, beef broth, Worcestershire sauce, salt, and black pepper. Let the mixture simmer for 3 to 4 minutes until it slightly thickens, blending all the flavors together.
- Add Peas and Cool: Stir in the frozen peas and cook for an additional minute. Remove the skillet from heat and allow the filling to cool completely, which helps when assembling the pies.
- Prepare Dough Circles: Roll out the refrigerated pie crusts and cut out 8 circles total (4 from each crust), which will form the base for each hand pie.
- Fill and Seal: Place approximately 1/4 cup of the cooled beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal properly. Cut small slits on the top of each pie to allow steam to escape during baking.
- Apply Egg Wash: Brush the tops of each hand pie with the beaten egg. This will give them a beautiful golden brown and shiny finish once baked.
- Bake the Hand Pies: Place the pies on the prepared baking sheet and bake in the preheated oven for 18 to 22 minutes or until golden brown.
- Cool and Serve: After baking, let the hand pies cool slightly before serving to enjoy them safely and at the best texture.
Notes
- Make sure the filling is completely cool before assembling the pies to prevent the dough from becoming soggy.
- These hand pies can be made ahead and frozen before baking. Bake straight from frozen, adding an extra 5 minutes to the baking time.
- Feel free to substitute ground beef with ground turkey or chicken for a leaner option.
- The small slits on top of the pies allow steam to escape and prevent the pies from bursting during baking.
- You can add other vegetables like corn or bell peppers to the filling for extra flavor and texture.
