Description

  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon sriracha
  • 1 tablespoon fresh cilantro (chopped)


Instructions

  1. Preheat the Grill: Preheat your grill to medium-high heat, around 400°F, to ensure it’s hot enough for perfect searing and grilling.
  2. Season the Chicken: Rub the chicken thighs with olive oil, then evenly sprinkle the Thai seasoning over them to coat thoroughly with flavor.
  3. Prepare the Glaze: In a small bowl, whisk together sweet chili sauce, soy sauce, lime juice, sriracha, and chopped cilantro. Set this flavorful glaze aside for later use.
  4. Grill the Chicken: Place the seasoned chicken thighs on the grill and cook for 5-6 minutes on each side, allowing them to develop a nice char and cook through.
  5. Apply Glaze: During the last 2 minutes of grilling, brush half of the prepared glaze liberally over the chicken thighs for a sweet and spicy finish.
  6. Rest the Chicken: Remove the chicken when the internal temperature reaches 160°F (it will rise to about 165°F while resting). Brush the remaining glaze over the chicken and let it rest on a cutting board for 5 minutes to retain juices.
