Description

This Grilled Cheese Burrito recipe combines flavorful taco-seasoned ground beef, creamy nacho and chipotle sauces, and a blend of melted cheddar and mozzarella cheeses wrapped in a warm flour tortilla. Grilled to crispy perfection with a cheesy crust, it’s a delicious fusion of comfort foods that’s quick to prepare and perfect for a satisfying meal.

Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef
  • 1 packet taco seasoning

Rice and Sauces

  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce
  • 1/4 cup chipotle sauce

Cheeses

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Other

  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. Brown the ground beef: Heat a skillet over medium heat, add the ground beef, and cook until browned, breaking it up with a spoon. Drain any excess grease to avoid a greasy burrito.
  2. Season the beef: Add taco seasoning and 1/4 cup water to the browned beef, stir well, then simmer for about 5 minutes to allow the flavors to meld and the sauce to thicken slightly.
  3. Warm the tortillas: Heat the tortillas in a skillet or microwave just until they become flexible and easy to fold without tearing.
  4. Assemble the burritos: On each warm tortilla, layer cooked white rice, seasoned beef, nacho cheese sauce, chipotle sauce, and sour cream evenly.
  5. Add cheeses: Sprinkle shredded cheddar and mozzarella cheeses generously on top of the layered fillings.
  6. Fold and roll: Fold the sides of each tortilla inward and roll tightly to enclose all fillings securely.
  7. Prepare the skillet: Sprinkle some shredded cheese onto a preheated skillet or griddle and allow it to melt slightly.
  8. Grill the burrito seam-side down: Place the burrito seam side down on the melted cheese in the skillet and cook for 3–4 minutes until the bottom is crispy and golden brown.
  9. Flip and finish grilling: Carefully flip the burrito and cook the other side until it is crispy and the cheese on the burrito is melted, about 3–4 minutes more.

Notes

  • You can substitute ground turkey or chicken for a leaner protein option.
  • Adjust the amount of chipotle sauce according to your preferred spice level.
  • Use a non-stick skillet or add a little butter/oil to prevent sticking while grilling.
  • Serve with a side of salsa or guacamole for added freshness.
  • Cook the rice ahead of time to speed up assembly.
  • For a crispier burrito, press down slightly with a spatula while grilling.
