Description

This Greek Chicken Bowls recipe features tender marinated chicken breasts air-fried to perfection and served over a bed of fresh vegetables, rice or quinoa, and topped with a creamy homemade tzatziki sauce. It’s a flavorful, healthy bowl meal inspired by classic Greek ingredients and vibrant Mediterranean flavors.

Ingredients

Scale

Chicken Marinade

  • 4 small chicken breasts, about 1 1/4 pounds
  • 1/4 cup olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes

Base and Vegetables

  • 2 cups cooked rice or quinoa
  • 2 cups halved grape or cherry tomatoes
  • 2 cups diced or chopped cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt, or to taste
  • 1 tablespoon fresh chopped dill

Optional Garnishes

  • Olives
  • Additional olive oil
  • Extra lemon juice
  • Tahini dressing

Instructions

  1. Prepare the Chicken Marinade: In a bowl, whisk together olive oil, lemon zest, lemon juice, honey, garlic powder, dried oregano, dried basil, salt, black pepper, and red pepper flakes until well combined.
  2. Marinate the Chicken: Pound the chicken breasts to about 1/2 inch thickness for even cooking. Place them in a shallow bowl or a ziplock bag and pour the marinade over the chicken, ensuring each piece is well coated. Let the chicken marinate for at least 30 minutes, or up to a few hours in the refrigerator for best flavor.
  3. Prepare the Tzatziki Sauce: While the chicken marinates, mix the Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and fresh dill in a bowl. Stir well and set aside to allow flavors to meld.
  4. Prep Rice and Veggies: Cook the rice or quinoa according to package instructions. Wash and halve the grape or cherry tomatoes, dice the cucumber, shred the romaine lettuce, and slice the red onion. Set these aside for assembling the bowls.
  5. Cook the Chicken: Preheat your air fryer to 380°F. Place the marinated chicken breasts in the air fryer basket and cook for 7 minutes. Flip the chicken and cook for an additional 3-4 minutes, or until the internal temperature reaches 165°F. Alternatively, you can cook the chicken in a skillet over medium heat until golden brown and fully cooked.
  6. Assemble the Bowls: In each bowl, layer the cooked rice or quinoa, tomatoes, cucumber, shredded lettuce, sliced red onion, and crumbled feta cheese. Slice the cooked chicken breasts and add them on top. Spoon the tzatziki sauce over the assembled ingredients.
  7. Add Optional Garnishes: For additional flavor, add olives, drizzle with some extra olive oil, a squeeze of lemon juice, or a dollop of tahini dressing according to your preference. Serve immediately and enjoy your fresh Greek Chicken Bowls!

Notes

  • Marinating the chicken for longer than 30 minutes (up to a few hours) will enhance the flavor.
  • If you do not have an air fryer, cooking the chicken in a skillet is an excellent alternative.
  • Use Greek yogurt for a thicker, creamier tzatziki; regular yogurt can be used but may be thinner.
  • Rice or quinoa can be substituted based on preference or dietary needs.
  • Adjust salt and pepper in the tzatziki to taste.
  • Optional garnishes like olives and tahini add extra Mediterranean flair but are not required.
