Instructions
- Cook the eggs: Place the eggs in a saucepan and cover with cold water. Bring to a gentle boil, then cover the pan, turn off the heat, and let the eggs sit for 10–12 minutes. Transfer them to an ice bath, cool completely, peel off the shells, and chop them into pieces.
- Prepare vegetables and herbs: Halve the cherry tomatoes, finely dice the red onion, and chop the fresh dill and parsley.
- Make the dressing: In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, garlic powder, kosher salt, and black pepper until the mixture is smooth and creamy.
- Combine ingredients: Add the chopped eggs, halved tomatoes, diced red onion, dill, and parsley to the bowl with the dressing. Gently fold everything together until evenly coated.
- Chill the salad: If possible, refrigerate the egg and tomato mixture for 20 to 30 minutes to allow the flavors to meld and the dressing to thicken slightly.
- Add the crackers: Just before serving, crush the salted crackers into bite-size pieces and gently fold them into the salad to maintain their crunchiness.
