Description

This easy and delicious Pizza Toast recipe features toasted sourdough bread topped with garlic-infused olive oil, fresh Roma tomatoes, creamy mozzarella, and Parmesan cheese, finished with fragrant basil leaves for a classic Italian flavor in a quick snack or light meal.

Ingredients

Scale

Base

  • 4 large slices of sourdough bread or Artisan bread
  • 1 Tablespoon extra-virgin olive oil (divided)
  • 2 cloves garlic (minced)

Toppings

  • 2 Roma tomatoes (sliced thin)
  • 8 slices whole fat mozzarella cheese
  • ¼ cup freshly grated Parmesan cheese
  • Salt and pepper (to taste)
  • 6 fresh basil leaves (chiffonade)

Instructions

  1. Prepare the garlic oil: In a small bowl, combine half the olive oil with the minced garlic to create a garlic-infused oil. This will add a fragrant base flavor to the bread.
  2. Toast the bread slices: Lightly brush each slice of sourdough bread with the garlic olive oil mixture on both sides. Toast the bread slices in a skillet over medium heat or under a broiler until golden and slightly crispy, about 2-3 minutes per side.
  3. Add tomato slices: Arrange the thinly sliced Roma tomatoes evenly over the toasted bread slices, ensuring coverage but not overcrowding.
  4. Layer the cheese: Place two slices of whole fat mozzarella cheese on top of the tomato layer for each slice of bread. Sprinkle grated Parmesan cheese evenly over the mozzarella.
  5. Season and bake: Season with salt and freshly ground black pepper to taste. Transfer the topped bread slices to a preheated oven or toaster oven at 375°F (190°C) and bake until the cheese is melted and bubbly, about 8-10 minutes.
  6. Garnish and serve: Remove from the oven and top each pizza toast with chiffonade-cut fresh basil leaves. Drizzle the remaining olive oil over the top, if desired, and serve immediately while warm.

Notes

  • For extra flavor, add a pinch of red pepper flakes or Italian seasoning over the cheese before baking.
  • If using a skillet, cover the pan with a lid to help melt the cheese faster.
  • Use fresh, ripe Roma tomatoes for the best taste and texture.
  • This recipe can be adapted with gluten-free bread to accommodate dietary needs.
