Ingredients
Scale
Base
- 4 large slices of sourdough bread or Artisan bread
- 1 Tablespoon extra-virgin olive oil (divided)
- 2 cloves garlic (minced)
Toppings
- 2 Roma tomatoes (sliced thin)
- 8 slices whole fat mozzarella cheese
- ¼ cup freshly grated Parmesan cheese
- Salt and pepper (to taste)
- 6 fresh basil leaves (chiffonade)
Instructions
- Prepare the garlic oil: In a small bowl, combine half the olive oil with the minced garlic to create a garlic-infused oil. This will add a fragrant base flavor to the bread.
- Toast the bread slices: Lightly brush each slice of sourdough bread with the garlic olive oil mixture on both sides. Toast the bread slices in a skillet over medium heat or under a broiler until golden and slightly crispy, about 2-3 minutes per side.
- Add tomato slices: Arrange the thinly sliced Roma tomatoes evenly over the toasted bread slices, ensuring coverage but not overcrowding.
- Layer the cheese: Place two slices of whole fat mozzarella cheese on top of the tomato layer for each slice of bread. Sprinkle grated Parmesan cheese evenly over the mozzarella.
- Season and bake: Season with salt and freshly ground black pepper to taste. Transfer the topped bread slices to a preheated oven or toaster oven at 375°F (190°C) and bake until the cheese is melted and bubbly, about 8-10 minutes.
- Garnish and serve: Remove from the oven and top each pizza toast with chiffonade-cut fresh basil leaves. Drizzle the remaining olive oil over the top, if desired, and serve immediately while warm.
Notes
- For extra flavor, add a pinch of red pepper flakes or Italian seasoning over the cheese before baking.
- If using a skillet, cover the pan with a lid to help melt the cheese faster.
- Use fresh, ripe Roma tomatoes for the best taste and texture.
- This recipe can be adapted with gluten-free bread to accommodate dietary needs.
