Shrimp Skewers

  • 1 lb large shrimp (1620 count)
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving
  • 46 wooden skewers (soaked in water for 20 minutes)


Instructions

  1. Prepare Skewers and Oven: Soak 4–6 wooden skewers in water for 20 minutes to prevent burning during broiling. Preheat your broiler to high. Line a baking sheet with foil and lightly grease it with nonstick spray or olive oil.
  2. Marinate Shrimp: In a large mixing bowl, combine the shrimp with olive oil, minced garlic, smoked paprika, salt, and black pepper. Toss well to ensure the shrimp are evenly coated with the marinade.
  3. Add Parmesan Coating: Sprinkle the grated Parmesan cheese over the shrimp and gently toss again so that the cheese sticks evenly to the shrimp, helped by the olive oil coating.
  4. Thread Shrimp on Skewers: Thread 4–5 shrimp onto each soaked skewer by piercing through the thicker and thinner ends to hold them securely in place for even cooking.
  5. Broil Shrimp: Lay the shrimp skewers on the prepared baking sheet in a single layer. Broil the shrimp for 2–3 minutes on each side or until the shrimp turn a pink color and the Parmesan cheese forms a golden crust.
  6. Garnish and Serve: Remove the skewers from the oven, sprinkle with freshly chopped parsley, and serve immediately alongside lemon wedges and your favorite dipping sauces for an extra burst of flavor.
