Instructions

  1. Cook ground beef: In a skillet over medium heat, cook the ground beef until fully browned, breaking it apart as it cooks. Drain any excess fat to keep the dish from being greasy.
  2. Add taco seasoning: Stir in the taco seasoning packet along with a splash of water. Let the mixture simmer for 2–3 minutes to allow the flavors to blend.
  3. Prepare vegetables: While the beef cooks, chop the green cabbage and dice the tomatoes. Drain and rinse the canned black beans and sweet corn to remove excess liquid.
  4. Assemble layers: In a large serving bowl or casserole dish, layer the chopped cabbage, cooked seasoned beef, black beans, corn, and diced tomatoes. Toss gently to combine ingredients evenly.
  5. Add toppings: Sprinkle the top of the combined mixture with the Fritos corn chips for crunch, then evenly sprinkle shredded cheddar cheese over the chips.
