These Eyeball Jello Shots are a fun and spooky treat, perfect for Halloween parties or themed gatherings. Made with strawberry gelatin mixed with vodka and adorned with gummy eyeball candies, they are easy to prepare and offer a playful way to enjoy a boozy snack. The recipe involves dissolving gelatin in boiling water, mixing in vodka and cold water, pouring into shot cups, and chilling until set.
Ingredients
Scale
Gelatin Mixture
- 3 ounce box Strawberry Jell-O gelatin
- 1 cup boiling water
- ½ cup cold water
- ½ cup vodka
Garnish
- 12 gummy eyeball candies
Instructions
- Dissolve Gelatin: In a large bowl with a pour spout, add the strawberry gelatin powder and pour in 1 cup of boiling water. Whisk thoroughly until the gelatin is completely dissolved without any lumps.
- Add Cold Water and Vodka: Whisk in the ½ cup cold water followed by ½ cup vodka, mixing until the liquid is evenly combined and smooth.
- Pour into Cups: Place twelve 2-ounce jello shot cups on a rimmed tray to catch any spills. Slowly pour the gelatin mixture into each cup up to the fill line, leaving approximately ⅛ inch space at the top.
- Initial Chill & Garnish: Refrigerate the tray for 1 to 1½ hours until the shots are partially set but still tacky to the touch. Then, gently place one gummy eyeball candy on top of each shot.
- Final Chill: Return the tray to the refrigerator for an additional 1½ hours to overnight to allow the jello shots to fully set and firm up around the gummy eyeballs.
- Store: Once fully set, cover each cup with a lid and stack them in the refrigerator until ready to serve, ensuring they stay chilled and intact.
Notes
- Use a rimmed tray to easily transfer the shot cups to and from the refrigerator without spilling.
- Ensure the gelatin is completely dissolved in boiling water to avoid grainy texture.
- The partial set before adding gummy eyeballs helps them stay suspended on top rather than sinking.
- Jello shots can be made a day ahead and stored refrigerated with lids for freshness.
- For a non-alcoholic version, substitute vodka with an equal amount of cold water or fruit juice.
