Description

This Easter Jello-Pie is a vibrant, no-bake layered dessert featuring colorful pastel stripes of strawberry, lemon, and berry blue gelatin combined with a creamy sweetened condensed milk layer, all set in a crisp graham cracker crust. Perfect for springtime celebrations and holiday gatherings, this visually striking pie is easy to prepare and delightfully refreshing.

Ingredients

Scale

Crust

  • 1 pre-made 9-inch graham cracker crust

Gelatin Layers

  • 1 package (3 ounces) strawberry gelatin
  • 1 package (3 ounces) lemon gelatin
  • 1 package (3 ounces) berry blue gelatin
  • 3 cups boiling water, divided
  • 1 cup cold water, divided

Condensed Milk Layer

  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/3 cup boiling water (part of the total boiling water)
  • 1/3 cup cold water (part of the total cold water)

Garnish (optional)

  • Whipped topping
  • Pastel sprinkles

Instructions

  1. Dissolve Gelatin: In three separate bowls, dissolve each flavor of gelatin (strawberry, lemon, berry blue) with 1 cup boiling water each, stirring until completely dissolved. Stir 1/3 cup cold water into each bowl and let cool slightly.
  2. Prepare Condensed Milk Mixture: In a separate bowl, whisk together the sweetened condensed milk, vanilla extract, and 1/3 cup boiling water until smooth. Stir in 1/3 cup cold water and allow to cool slightly.
  3. Layer First Gelatin: Pour half of one gelatin flavor into the graham cracker crust and refrigerate for 15 to 20 minutes until just set but still tacky to the touch.
  4. Add Condensed Milk Layer: Gently spoon a layer of the condensed milk mixture over the set gelatin. Return to the refrigerator and chill until slightly firm.
  5. Repeat Layers: Alternate layers by adding the remaining half of the first gelatin flavor, followed by condensed milk, then the remaining gelatin flavors one at a time, each time chilling between additions to create distinct pastel stripes.
  6. Final Chill: Once all layers are added, refrigerate the pie for at least 4 hours or until fully set and firm.
  7. Garnish and Serve: Before slicing, garnish the pie with whipped topping and pastel sprinkles as desired. Slice and enjoy your festive Easter Jello-Pie!

Notes

  • Allow each gelatin layer to set enough to support the next without fully hardening to maintain clean, distinct layers.
  • Using clear measuring cups with spouts helps with easier and more precise pouring of liquid layers.
  • Keep the pie level in the refrigerator to ensure even, flat layers throughout.
  • You can substitute gelatin flavors as desired for different color combinations or tastes.
  • This pie should be kept refrigerated until fully set and consumed within 2-3 days for best freshness.
