Description

Teriyaki Chicken Casserole is a savory and comforting one-dish meal featuring shredded chicken, rice, and vegetables coated in a homemade sweet and savory teriyaki sauce, then baked to perfection with a cheesy topping. This dish combines ease of preparation with delicious flavors and is perfect for weeknight dinners or meal prepping.

Ingredients

Scale

Chicken and Casserole Ingredients

  • 2 large chicken breasts (about 1 lb), cooked and shredded (or use rotisserie chicken for convenience)
  • 2 cups cooked rice (white, brown, or cauliflower rice for low-carb)
  • 1 cup frozen peas (or carrots or corn)
  • 1/2 cup chopped green onions
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 cup grated Parmesan cheese (optional)
  • 2 tbsp sesame seeds (optional, for garnish)

Teriyaki Sauce Ingredients

  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 2 tbsp honey or maple syrup (or stevia for low sugar)
  • 2 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp cornstarch (optional, for thickening)
  • 1/4 cup water (for cornstarch slurry, optional)

Instructions

  1. Cook the chicken: If not pre-cooked, prepare chicken breasts by boiling, grilling, or pan-frying. Once cooked, shred the chicken using forks or a mixer.
  2. Make the teriyaki sauce: In a saucepan, combine soy sauce, honey (or maple syrup), rice vinegar, sesame oil, garlic, and ginger. Simmer over medium heat. For a thicker sauce, mix cornstarch with water to form slurry and stir into sauce until thickened, about 3-5 minutes. Remove from heat.
  3. Prepare the casserole mixture: Preheat oven to 375°F (190°C). In a large bowl, mix shredded chicken, cooked rice, frozen peas (or veggies), green onions, and half of the cheddar and Parmesan cheeses if using. Pour teriyaki sauce over mixture and toss to coat evenly.
  4. Assemble the casserole: Transfer mixture to a greased 9×13-inch baking dish. Sprinkle remaining cheeses on top evenly.
  5. Bake the casserole: Cover dish with aluminum foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until top is bubbly and golden brown.
  6. Garnish and serve: Sprinkle sesame seeds and extra green onions if desired. Serve hot and enjoy.

Notes

  • Use rotisserie chicken to reduce cooking time.
  • Substitute quinoa or cauliflower rice for a low-carb option.
  • Add extra vegetables like bell peppers, broccoli, or zucchini for more nutrients and color.
  • For creamier casserole, incorporate cream cheese or sour cream into the mixture.
  • Add sriracha or red pepper flakes to teriyaki sauce for a spicy twist.
  • Use tamari instead of soy sauce for a gluten-free version.
  • Adjust sweetness with stevia or low-sugar sweeteners if preferred.
