Ingredients
Scale
Marinated Onions
- 1 medium red onion, thinly sliced
- Juice and zest of 1 lemon
- 2 tsp red wine vinegar
- 1 tsp extra virgin olive oil
- 1 tsp maple syrup
- Kosher salt, to taste
- 3 tbsp minced parsley or cilantro leaves
Instructions
- Combine Ingredients: Add the thinly sliced red onions to a medium-sized mixing bowl. Pour in the lemon juice and zest, red wine vinegar, maple syrup, extra virgin olive oil, and season generously with kosher salt. Add the minced parsley or cilantro leaves to the bowl.
- Massage and Marinate: Using clean hands, gently massage the combined ingredients into the onions until they begin to soften slightly. Cover the bowl with plastic wrap or a lid and set aside at room temperature for 10 to 15 minutes to allow the flavors to meld and the onions to further soften. Alternatively, for more depth in flavor, cover and refrigerate the onions until ready to use.
Notes
- The marinated onions can be refrigerated for up to 3 days, making it a great make-ahead condiment.
- Adjust the amount of maple syrup for sweetness according to taste.
- Use either parsley or cilantro depending on your flavor preference or the dish you are pairing the onions with.
- These onions add a bright, acidic punch to grilled meats, tacos, sandwiches, or salads.
