Ingredients
Scale
Main Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple
- 1 large egg
- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup (optional, for added sweetness)
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners to prepare for baking.
- Mix Ingredients: In a mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup if using, baking powder, and salt. Stir thoroughly until all ingredients are well incorporated.
- Let Batter Sit: Allow the batter to rest for 5 minutes so the oats can absorb moisture, which helps the bites become fluffier and better in texture.
- Bake: Spoon the batter evenly into the mini muffin pan, filling each cup nearly to the top. Bake in the preheated oven for 18-20 minutes, or until the bites are set and lightly golden on top.
- Cool and Serve: Let the bites cool in the pan for a few minutes, then transfer them to a wire rack to cool completely. Serve warm or store in the refrigerator for up to 4 days.
Notes
- You can substitute the applesauce with a small grated apple for added texture.
- Optional honey or maple syrup adds sweetness but can be omitted to lower sugar content.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- These bites can be enjoyed as a quick breakfast or a nutritious snack anytime.
