Instructions
- Prepare the Strawberries: Wash and hull the strawberries, then slice them into thin pieces. Set aside for layering.
- Mix the Yogurt Base: In a mixing bowl, combine Greek yogurt and honey or maple syrup until well blended and smooth for a sweetened yogurt base.
- Prep the Molds: Line a mini muffin tin or silicone molds with cupcake liners or lightly spray with cooking spray to prevent sticking of the frozen bites.
- First Layer of Yogurt: Spoon the yogurt mixture into each mold, filling each about halfway to create a base layer.
- Add Strawberries: Place a slice of strawberry on top of the yogurt layer in every mold, pressing gently to ensure the fruit adheres to the yogurt.
- Top with Yogurt: Add more yogurt mixture over the strawberries until each mold is filled to the top, creating a sandwich effect with the fruit inside.
- Melt the Chocolate: In a microwave-safe bowl, combine semi-sweet chocolate chips and coconut oil if using. Microwave in 30-second bursts, stirring thoroughly between each until melted and smooth.
