Description

Chocolate Almond Clusters are a delicious and nutritious snack made with raw almonds, coconut flakes, pumpkin seeds, cacao nibs, and a touch of cinnamon, all lightly sweetened with raw honey and baked to a perfect crunch. These clusters make a perfect healthy treat or energy-boosting snack for any time of day.

Ingredients

Scale

Dry Ingredients

  • 2 cups raw almonds
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup raw cacao nibs
  • 1 tbsp cinnamon

Wet Ingredients

  • 1/3 cup raw honey

Instructions

  1. Prepare the dry mix: Add the raw almonds, coconut flakes, pumpkin seeds, cacao nibs, and cinnamon to a food processor or blender. Pulse for about 1 minute until the mixture is roughly chopped and well combined.
  2. Spread on baking sheet: Evenly spread the dry mixture across a baking sheet to create a single layer, ensuring even roasting.
  3. Add honey: Drizzle the raw honey equally over the nut and seed mixture on the baking sheet.
  4. Mix honey with nuts: Use a silicone spatula to gently fold and press the honey into the nuts and seeds, helping it to coat and bind them slightly.
  5. Bake: Preheat your oven to 350ยฐF (175ยฐC). Bake the mixture for about 30 minutes, tossing and turning the nuts and seeds a couple of times during baking to ensure even roasting and prevent burning.

Notes

  • Use raw honey for natural sweetness and better health benefits.
  • Make sure to toss the mixture during baking to avoid uneven browning or burning.
  • Store clusters in an airtight container at room temperature for up to one week or refrigerate for longer freshness.
  • For a vegan version, substitute honey with maple syrup or agave nectar, though baking times may vary slightly.
