  • 3 white sub rolls
  • Unsalted butter, softened, for brushing
  • Garlic powder, to taste
  • Mayo, enough to generously spread on rolls
  • 1 (10-ounce) package Caesar salad kit (includes lettuce, dressing, and croutons)
  • 1 batch chicken cutlets (see note 2) or 1 cup diced rotisserie chicken
  • Parmesan cheese, freshly grated, optional


Instructions

  1. Cook Chicken: Prepare the chicken cutlets by cooking them until golden and cooked through, or alternatively dice up rotisserie chicken to get 1 cup of chicken.
  2. Prepare Rolls: Brush the inside of each sub roll generously with softened unsalted butter. Lightly sprinkle with garlic powder. Toast the rolls in a skillet over medium heat or broil them in the oven until they are golden and slightly crisp. Allow them to cool slightly before proceeding.
  3. Spread Mayo: Generously spread mayonnaise on both sides of each toasted roll to add moisture and flavor.
  4. Mix Salad: Pour the contents of the Caesar salad kit into a large mixing bowl. Use tongs to toss the salad until everything is well combined. If using diced rotisserie chicken instead of crispy chicken cutlets, add it to the salad mixture and toss to distribute evenly.
  5. Assemble: Divide the Caesar salad mixture evenly among the toasted and spread rolls. Layer the cooked chicken cutlets evenly on top of the salad. Optionally, grate fresh Parmesan cheese over the chicken for added richness. Close the sandwich and serve immediately for the best experience.

  • If you do not have chicken cutlets, rotisserie chicken diced into 1 cup can be used as a shortcut.
