Taquitos

  • 7 to 8 small (8-inch) flour tortillas
  • 1/2 cup salted butter
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon


Instructions

  1. Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese, sour cream, 2 tablespoons of granulated sugar, and vanilla extract until the mixture is smooth and creamy with no lumps remaining.
  2. Fill and Roll the Taquitos: Warm the flour tortillas in the microwave for about 10 seconds to make them more pliable. Take one tortilla and spread approximately 1/3 cup of the cheesecake filling on one end. Roll it up tightly, leaving the ends open. Repeat the process with all tortillas and the remaining cheesecake filling.
