Instructions
- Preparation: Preheat your oven to 375 degrees Fahrenheit to get it ready for baking the chicken, bacon, and jalapenos as well as the casserole later.
- Cooking Chicken and Jalapenos: Place the chicken breasts and jalapeno halves on a baking sheet. Drizzle with the olive oil and sprinkle a pinch of salt over them. On a separate baking sheet, lay out the bacon strips. Place both sheets in the preheated oven and bake for about 20–25 minutes, or until the chicken is cooked through and the bacon is crispy.
- Prepping Cheese Mixture: While the meats are baking, combine ¾ cup of cheddar cheese, the cream cheese, sour cream, low-fat milk, and cayenne in a large mixing bowl. Mix until smooth and evenly combined to create a rich and spicy cheese base.
- Assembly: Once baked, crumble the crispy bacon strips, shred the cooked chicken breasts, and dice the roasted jalapenos. Add ¾ of the diced jalapenos, the shredded chicken, and ¾ of the crumbled bacon into the cheese mixture. Stir thoroughly to blend all ingredients.
- Baking the Casserole: In a 9 x 12 inch baking dish, place the cauliflower florets in an even layer at the bottom. Pour the cheese, chicken, and bacon mixture over the cauliflower and spread it evenly. Top the casserole with the remaining ½ cup of cheddar cheese, the remaining jalapenos, and leftover bacon. Bake in the oven at 375°F for approximately 20 minutes or until the top is golden brown and bubbly.
