Ingredients
Scale
Pear Compote
- 1 Bosc pear, chopped into small cubes (120g chopped)
- 1 tbsp (10g) coconut sugar
- 1 tbsp water
- Pinch of kosher salt
Oatmeal
- 1 cup (190g) creamy milk (house blend milk recommended)
- 1/2 cup (45g) rolled oats
- 1/4 tsp ground cardamom
- 1/4 tsp ground vanilla or vanilla paste
- 1/8 tsp Diamond Crystal kosher salt
Toppings
- Cold milk
- Almond butter
- Hemp seeds
Instructions
- Make the pear compote: Add the chopped pear into a sautรฉ pan or the same pot you will use for oatmeal to save dishes. Include the coconut sugar, water, and a pinch of kosher salt. Cook over medium-high heat, stirring occasionally, until the pears start to caramelize and develop color. Continue cooking until pears become very soft and begin to break down.
- Prepare the pear mixture: Reserve 2-3 tablespoons of the caramelized pears in a separate bowl. Mash the remaining pear compote with a fork or potato masher until smooth.
- Cook the oatmeal: Add the mashed pear, creamy milk, rolled oats, ground cardamom, vanilla, and kosher salt to the pot. Heat over medium-high until the mixture begins to bubble, then reduce heat to low. Cook while stirring occasionally. Taste and add more coconut sugar if desired. Once cooked, cover the pot with a lid and let the oatmeal sit for 5-10 minutes to thicken.
- Serve: Transfer the oatmeal into a bowl. Top with a generous dollop of almond butter, the reserved caramelized pear pieces, a sprinkle of hemp seeds, and a splash of cold milk. Enjoy warm.
Notes
- Use Bosc pears for their firm texture and sweetness, ideal for caramelizing.
- House blend creamy milk is recommended, but any milk of choice can be used.
- Adjust sweetness by adding more or less coconut sugar according to taste.
- Hemp seeds add a nutty flavor and boost protein content; optional topping.
- Letting the oatmeal sit covered allows it to thicken and flavors to meld.
