- Heat Butter and Oil: In a large (12-inch) skillet, add the olive oil and melt the salted butter over medium-low heat. Add the minced garlic and finely diced white onion, then sauté them for about 30 seconds until fragrant.
- Fry the Rice: Add the medium grain rice to the skillet and fry it, stirring frequently, until the rice turns golden brown, about 5 minutes. This step toasts the rice and develops flavor.
- Add Corn and Liquids: Pour in the frozen corn directly into the skillet and mix to combine with the rice. Increase the heat to medium. Carefully add the boiling water and the chicken bouillon, stirring everything together.
- Cook Rice Covered: Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet with a lid, and allow the rice to cook for 15 minutes without lifting the lid to ensure even cooking.
- Rest and Fluff: After 15 minutes, turn off the heat but keep the lid on for another 5 minutes to steam the rice further. Remove the lid and fluff the rice gently with a fork. Garnish with chopped parsley and sliced green onion if desired. Serve warm and enjoy!
