Instructions
- Prepare Peanut Butter Center: In a large bowl, use electric hand mixers to beat together the creamy peanut butter, softened unsalted butter, powdered sugar, salt, and vanilla extract until the mixture is completely smooth and well combined.
- Shape & Chill: Use a teaspoon cookie scoop to form the peanut butter mixture into small, bite-sized balls. Place the balls on a parchment paper-lined sheet pan and freeze them for 20 minutes to firm up.
- Melt Chocolate: In a small microwave-safe bowl, combine the chocolate chips with the coconut oil. Heat the mixture in 20-second intervals, stirring between each session for a total heating time of about 20 seconds, until the chocolate melts smoothly. Be careful not to overheat.
- Dip Buckeyes: Remove the chilled peanut butter balls from the freezer. Using a toothpick to spear the top of each ball, dip them into the melted chocolate, leaving a small portion of peanut butter exposed at the top to resemble a classic buckeye. Return the dipped candies to the tray and smooth out any toothpick holes with your fingertips if desired.
