Instructions
- Preheat Oven: Preheat the oven to 400°F to prepare for roasting the chicken, cheese, and tomatoes.
- Prepare Chicken: Slice chicken breasts in half lengthwise to create 4 pieces. Coat the chicken with 1 tablespoon of olive oil followed by 3 tablespoons of Cajun seasoning, ensuring even coverage. Place on a baking sheet ready for roasting.
- Assemble Sauce and Vegetables: In a 9×13 inch oven-safe casserole dish, combine Boursin cheese and cherry tomatoes. Drizzle tomatoes with the remaining 2 tablespoons of olive oil, then season with salt and pepper.
- Roast Chicken and Sauce: Place baking sheet with chicken and casserole dish with cheese and tomatoes into the oven. Roast both for 20-25 minutes until chicken is cooked through and tomatoes are tender.
