Blueberry Mixture
- 1 cup of fresh blueberries
- 2 tablespoons of honey
- 1/4 teaspoon of lemon zest
- A pinch of salt
Cheese and Garnish
- 4 ounces of creamy Brie cheese, sliced
- Optional: fresh basil leaves for garnish
Instructions
- Prepare the blueberry mixture: In a small saucepan over medium heat, combine the blueberries, honey, lemon zest, and a pinch of salt. Cook while stirring occasionally for about 5 minutes until the blueberries start to release their juices and the mixture thickens slightly. Set aside to cool.
- Preheat the skillet: Heat a skillet or griddle over medium heat to get it ready for grilling the sandwiches.
- Butter the bread: Spread butter evenly on one side of each slice of bread. Place two slices, buttered side down, on a clean work surface.
- Layer Brie cheese: Evenly arrange the sliced Brie cheese on the unbuttered side of the two bread slices on the work surface.
- Add blueberry mixture: Spoon the cooled blueberry compote over the Brie cheese, spreading it evenly.
- Assemble the sandwich: Top the blueberry-covered slices with the remaining two slices of bread, buttered side up, to form two sandwiches.
- Grill the sandwiches: Place the sandwiches in the preheated skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted. Press gently with a spatula to help the sandwich cook evenly.
