Description

This Blueberry Grilled Cheese is a delightful twist on the classic sandwich, combining creamy Brie cheese with a sweet and tangy homemade blueberry compote. Perfectly toasted sourdough bread, melty Brie, and a burst of fresh blueberries create a gourmet flavor experience that’s easy to make in under 30 minutes.

Ingredients

Scale

Bread and Butter

  • 4 slices of bread (sourdough or your choice)
  • 2 tablespoons of unsalted butter, at room temperature

Blueberry Mixture

  • 1 cup of fresh blueberries
  • 2 tablespoons of honey
  • 1/4 teaspoon of lemon zest
  • A pinch of salt

Cheese and Garnish

  • 4 ounces of creamy Brie cheese, sliced
  • Optional: fresh basil leaves for garnish

Instructions

  1. Prepare the blueberry mixture: In a small saucepan over medium heat, combine the blueberries, honey, lemon zest, and a pinch of salt. Cook while stirring occasionally for about 5 minutes until the blueberries start to release their juices and the mixture thickens slightly. Set aside to cool.
  2. Preheat the skillet: Heat a skillet or griddle over medium heat to get it ready for grilling the sandwiches.
  3. Butter the bread: Spread butter evenly on one side of each slice of bread. Place two slices, buttered side down, on a clean work surface.
  4. Layer Brie cheese: Evenly arrange the sliced Brie cheese on the unbuttered side of the two bread slices on the work surface.
  5. Add blueberry mixture: Spoon the cooled blueberry compote over the Brie cheese, spreading it evenly.
  6. Assemble the sandwich: Top the blueberry-covered slices with the remaining two slices of bread, buttered side up, to form two sandwiches.
  7. Grill the sandwiches: Place the sandwiches in the preheated skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted. Press gently with a spatula to help the sandwich cook evenly.
  8. Rest and slice: Remove the sandwiches from the skillet and let them rest for a minute to allow the cheese to settle before slicing them in half.
  9. Serve: Serve warm, garnished with fresh basil leaves if desired for an extra fresh touch.

Notes

  • Use good quality sourdough or rustic bread for the best texture and flavor.
  • The blueberry mixture can be made ahead and refrigerated for up to 2 days.
  • Adjust the amount of honey based on your preferred level of sweetness.
  • Fresh basil adds a nice herbal aroma, but can be omitted if unavailable.
  • For a crispier crust, cook the sandwich longer on low heat.
