Ingredients
Scale
Biscuits
- 8 biscuits (store-bought or homemade)
Chorizo Gravy
- 12 oz Cacique pork chorizo (spicy flavor and richness)
- 1/2 medium onion (white or yellow), finely diced
- 3 tablespoons all-purpose flour (can swap for gluten-free flour)
- 2 1/2 cups whole milk (non-dairy milk works well)
Instructions
- Prepare the Biscuits: If using store-bought biscuits, bake them according to the package instructions until golden and fluffy. For homemade, roll out your favorite biscuit dough and bake until golden and fluffy.
- Brown the Chorizo: Heat a large sauté pan over medium-high heat and add the pork chorizo. Break it apart with a spatula and cook for 5-7 minutes, allowing it to sizzle and brown fully.
- Cook the Onion: Add the finely diced onion to the browned chorizo in the pan. Cook together for about 7 minutes until the onions soften and become translucent.
- Add the Flour: Sprinkle the all-purpose flour evenly over the chorizo and onion mixture. Stir continuously and cook for about 1 minute until the flour turns a light golden color, which will help thicken the gravy.
- Incorporate the Milk: Reduce the heat to medium-low and gradually stir in the whole milk. Allow the mixture to simmer gently for 5-7 minutes, stirring occasionally, until the gravy thickens to a creamy consistency.
- Season and Serve: Ladle the warm chorizo gravy generously over the fluffy biscuits. Add salt and freshly ground black pepper to taste, then serve immediately for a comforting breakfast treat.
Notes
- You can substitute all-purpose flour with gluten-free flour for a gluten-free version.
- Non-dairy milk like almond or oat milk works well if you prefer a dairy-free option, but keep in mind the flavor might vary slightly.
- Adjust the spice level by choosing mild or spicy chorizo according to your preference.
- For an extra touch, garnish with chopped fresh parsley or chives before serving.
