Ingredients
Scale
Sauce
- 2 teaspoons cornstarch
- 4 tablespoons reduced-sodium soy sauce
- 2 teaspoons Sriracha
- 1 tablespoon light brown sugar
- 1/3 cup chicken broth (or water)
- 2 tablespoons toasted sesame oil
- 1/4 teaspoon ground white pepper or black pepper (optional)
Stir Fry
- 3 tablespoons toasted sesame oil (divided)
- 1 pound ground pork
- 1 bunch thinly sliced green onions (divided, about 1 cup total)
- 2 teaspoons finely minced garlic (2 to 3 cloves)
- 2 teaspoons finely minced ginger (from 1-inch piece)
- 1 1/3 cups frozen, shelled edamame (or peas as alternative)
- 1 1/3 cups frozen corn
Noodles and Garnish
- 9 ounces instant ramen noodles (3 packets, without flavor packets)
- Sesame seeds (optional, for garnish)
- Additional ground white or black pepper (optional, for garnish)
Instructions
- Boil Water: Bring a large pot of water to a rolling boil to cook the ramen noodles.
- Prepare Sauce: In a small bowl, whisk together cornstarch and 4 tablespoons of soy sauce until smooth. Then stir in Sriracha, brown sugar, chicken broth, 2 tablespoons sesame oil, and ground white or black pepper. Set the sauce mixture aside to let the flavors meld.
- Cook Pork: Heat 1 tablespoon toasted sesame oil in a large pan or wok over high heat. Add the ground pork and sear it until browned, breaking it apart with a spatula. Once mostly cooked, add 1 tablespoon soy sauce and cook until the liquid evaporates to deepen flavor.
- Sauté Aromatics: Add half of the thinly sliced green onions (about 1/2 cup), minced garlic, and minced ginger to the pork. Sauté everything together for about 1 minute until fragrant.
- Add Vegetables: Incorporate the frozen edamame and frozen corn into the pan. Stir-fry for 2-3 minutes until the vegetables are tender but still vibrant.
- Cook Ramen: Place the instant ramen noodles into the boiling water and cook for exactly 2 minutes. Drain immediately and shake off any excess water to prevent sogginess.
- Combine and Toss: Add the cooked ramen noodles to the pan with pork and vegetables. Give the prepared sauce another quick whisk, then pour over the noodles. Toss everything together in the pan over medium heat until the sauce thickens and evenly coats all the ingredients. Remove from heat.
- Serve and Garnish: Transfer the ramen stir fry to serving bowls. Garnish with remaining sliced green onions, toasted sesame seeds, and additional ground pepper if desired. Adjust seasoning to taste and enjoy immediately!
Notes
- You can substitute peas for edamame if preferred or unavailable.
- Discard the instant ramen seasoning packets as this recipe uses its own flavorful sauce.
- Use reduced-sodium soy sauce to control saltiness in the dish.
- For extra spice, add more Sriracha or sprinkle red pepper flakes.
- To save time, prep garlic and ginger ahead or use pre-minced options.
