- 1 tsp fresh ginger, grated
Sauce
- ½ cup low-sodium soy sauce
- ¼ cup beef broth
- 2 tbsp brown sugar
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp water (for slurry)
Instructions
- Cook noodles: Boil ramen noodles according to package directions without using the seasoning packets. Drain and set aside to prevent overcooking.
- Cook broccoli: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add broccoli florets and sauté for 3 to 4 minutes until they are crisp-tender. Remove broccoli from pan and set aside.
- Cook beef: Add the remaining tablespoon of oil to the skillet. In batches if necessary, sear the thinly sliced beef in a single layer for 1 to 2 minutes per side until nicely browned. Remove excess liquid from the pan if needed to ensure proper searing.
- Add aromatics: Stir minced garlic and grated ginger into the beef in the pan. Cook for about 30 seconds until fragrant, taking care not to burn the garlic.
- Add sauce: In a bowl, whisk together soy sauce, beef broth, brown sugar, hoisin sauce, and sesame oil. Pour this sauce into the pan and bring it to a simmer. Stir in the cornstarch slurry (cornstarch mixed with water) and cook for 1 to 2 minutes until the sauce thickens.
- Combine: Return the cooked broccoli and drained noodles to the pan. Toss everything together thoroughly to coat with sauce and heat through evenly.
- Serve: Serve the beef and broccoli ramen garnished with sesame seeds or sliced green onions for extra flavor and presentation.
