Ingredients
Scale
Potatoes
- 4 large russet potatoes, cleaned and cut into wedges
Seasoning & Coating
- 4 tablespoons olive oil
- 2 teaspoons garlic powder
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- ⅓ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
- Non-stick cooking spray
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Generously spray the parchment paper with non-stick cooking spray to prevent sticking.
- Prepare potato wedges: Place the cleaned and cut potato wedges into a large bowl. Drizzle them evenly with olive oil and toss thoroughly to coat all wedges uniformly.
- Season the wedges: In a small mixing bowl, mix together the garlic powder, Italian seasoning, salt, and black pepper. Sprinkle this seasoning blend over the potato wedges and toss again to ensure even coverage.
- Arrange on baking sheet: Spread the seasoned wedges out in a single layer on the prepared baking sheet with the skin-side down. Make sure the wedges are not crowded to allow for proper baking and crisping.
- Add Parmesan: Evenly sprinkle the grated Parmesan cheese over the arranged potato wedges to add a savory crust as they bake.
- Bake: Place the baking sheet in the preheated oven and bake for 30 to 35 minutes until wedges are tender inside and golden brown outside. Halfway through baking (after about 15 minutes), gently flip the wedges to promote even browning.
- Cool slightly: Once baked, remove the wedges from the oven and allow them to cool for a couple of minutes to set and avoid burning when eating.
- Garnish and serve: Optionally sprinkle freshly chopped parsley over the warm wedges for added freshness and color. Serve immediately with your favorite dipping sauces.
Notes
- Make sure wedges are cut evenly for uniform cooking results.
- Flipping the wedges halfway through baking ensures even crispiness on all sides.
- Using parchment paper and non-stick spray helps prevent the wedges from sticking and makes cleanup easier.
- Fresh parsley adds a burst of color and mild herbal flavor but can be omitted.
- These wedges pair well with ketchup, ranch, or garlic aioli dips.
