Description

A savory and satisfying Bacon, Egg, and Cheese Croissant Bake that combines crispy bacon, fluffy scrambled eggs, and melted cheddar cheeses layered over toasted croissant pieces. Perfect for a hearty breakfast or brunch, this casserole can be prepared ahead and baked fresh for a crowd-pleasing meal.

Ingredients

Scale

Meat

  • 1 package (10 ounces) bacon

Dairy

  • 8 large eggs
  • 2 cups milk
  • 1 cup shredded white cheddar cheese (divided)
  • 1 cup shredded mild cheddar cheese (divided)

Bakery

  • 6 to 7 large croissants (already baked, not dough)

Spices & Herbs

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 3 tablespoons chopped chives

Instructions

  1. Bake the Bacon: Preheat your oven to 400°F. Line a large sheet pan with foil and arrange the bacon strips in a single layer. Bake for 12 to 14 minutes until crispy. Remove the bacon and place it on a paper towel-lined plate to drain excess grease, then chop into bite-sized pieces and set aside.
  2. Prepare Croissants: Lower the oven temperature to 350°F. Grease a 9×13-inch baking dish with nonstick spray. Tear the croissants into small pieces and spread them evenly in the baking dish. Toast the croissant pieces in the oven for 10 minutes to crisp them slightly.
  3. Mix Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, pepper, and half of each shredded cheese (1/2 cup white cheddar and 1/2 cup mild cheddar). Pour this mixture evenly over the toasted croissant pieces in the baking dish.
  4. Assemble and Bake: Evenly sprinkle the chopped bacon and the remaining shredded cheeses on top of the egg mixture and croissants. You can bake immediately or cover and refrigerate overnight.
  5. Bake to Finish: Bake uncovered at 350°F for 45 minutes or until the eggs are fully set and the cheese is melted and bubbly. Remove from oven, garnish with chopped chives, and serve warm.

Notes

  • You can prepare this casserole the night before by assembling it and refrigerating overnight, then baking fresh in the morning.
  • If you prefer, substitute croissants with other soft bread like brioche for a different texture.
  • Feel free to add vegetables such as diced bell peppers or mushrooms to the egg mixture for extra flavor and nutrition.
  • Ensure croissants are already baked; do not use raw croissant dough.
  • Use nonstick spray or butter to grease the baking dish to prevent sticking.
