Ingredients
Scale
Main Ingredients
- 1 pound lean ground beef
- 1 cup chunky salsa
- 1 (10-ounce) can red enchilada sauce
- 8 (8-inch) tortillas (flour preferred, but corn can be used)
- 1 (8-ounce) package Borden® Cheese Thick Cut Shredded Four Cheese Mexican (about 2 cups)
Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
- Cook Ground Beef: In a large skillet, brown the ground beef over medium-high heat until fully cooked. Drain excess fat and return the skillet to medium-low heat. Stir in the chunky salsa and cook together until heated through, then remove from heat.
- Prepare Baking Dish: Pour about half of the red enchilada sauce evenly into the bottom of the prepared baking dish to create a flavorful base.
- Assemble Enchiladas: Warm the tortillas according to package instructions to make them pliable. Spoon about 1/4 cup of the meat mixture down the center of each tortilla and add roughly 1 heaping tablespoon of shredded cheese on top. Roll tortillas tightly and place seam side down in the baking dish. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the remaining cheese over the top.
- Bake: Tightly cover the baking dish with aluminum foil. Bake in the preheated oven for 30 to 35 minutes, until the cheese is melted and bubbly and the enchiladas are heated through. Remove foil during the last 5 minutes if you prefer a slightly browned cheese topping.
Notes
- Flour tortillas work best to hold the filling without breaking, but corn tortillas add a more traditional flavor.
- For extra heat, add chopped jalapeños to the meat mixture or sprinkle red pepper flakes on top before baking.
- Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven or microwave.
- You can substitute ground turkey or chicken for a lighter version.
- Adding a sprinkle of fresh cilantro or a dollop of sour cream on serving adds great flavor.
